How do you cook your sheepshead?

I managed to pull a bunch of sheepshead yesterday including a massive 30" male (over 17 pounds).  Obviously, I am stoked.

How do you guys prepare your sheepshead?  I've heard of sashimi, ceviche, and cioppino.

The last few I've caught have been added to a cioppino and were pretty good.  I'm curious to hear if they're good as sashimi or ceviche.  Do people fry them like fish and chips?

Any guidance would be greatly appreciated.

I was stoked for you when I saw the DOTY entry this AM!!

I'm a big fan of the sheep sashimi. In fact, since I tried it like that I haven't even experimented with any other methods...

ps...it freezes and defrosts fine for sashimi as well.  ;D

I think you got enough fish there to try a few more recipes as well... Congrats on the fish man!!

The heads and carcasses make excellent soup as well...all that fatty gooey goodness is super yummy.

Braaaa like Jim said sashimi is good. I made spicy wasabe poke with tobiko and Hawaiian style poke. BOMB!
