Boiled Abalone

I slice and pound just like everyone else, but I got sick of fried.  Now I boil it in saltwater for 60-90 seconds.
I boil saltwater a little less salty than the ocean with onions, garlic and herbs for 30 minutes.
Then add lemon zest and a little lemon juice.
Drop the abalone in for 60-90 seconds and then drain.

I use the cooked abalone in salads and as a general ingredient to other dishes.
Last night it was sauteed gnocchi with sweet peppers and celery in a brown butter sauce.
