I built one just like the one from the link kayak shop you posted. I made it out of PVC.  It worked great on hard surfaces but when you got to sand the wheels sank into the sand.  I added a second set of wheels to f and broke the PVC on the next time out.  I made a new one out of steel pipe from home depot.  It is sturdy will hold the kayak well and is easy to pull over hard ground.  When I got to the sand same problem even with duellies it still sinks in the sand.  I used the wides set of wheels harbor freight had.  I may attempt to cover the set of wheels with the leg from an old wetsuit and hope it will ride above the sand.   

If I was not so cheep I would have bought a set of wheeleez with large rubber tires.  Now I am stuck trying to make it work.
