I have tried MFE several times and never found a way to overcome the sulphur flavor from their largely seaweed diet.

This "recipe" I found on youtube was delicious. The video leaves out a few things and I improvised a bit.



1. Fillet the slippery beast skin on. Using a heavy duty paper towel or a cotton rag helps a lot. You do not want to puncture the guts. Their shit sack stinks to high heaven and will spoil the meat. If you first cut off the head and carefully open the belly from the head side with a knife you can squeeze/pull out the guts, cutting the belly back to the anus and cut the guts free there.

2. Grill the bone/spine scrap on high heat for a couple minutes each side.

3. Make the sauce: 1 cup mirin, 1 cup soy sauce, 3/4 cup sake, 1 cup sugar, one small piece of nori. Simmer for a bit while stirring. Put the spine in and simmer for 15 minutes.

4. Remove bones and nori. Scoop 1/2 of broth to a glass jar. Reduce the remaining broth until it is syrupy.

5. Baste the eel generously with the unreduced broth and grill on high heat for a couple minutes each side.

6. The recipe calls for: Steam fillets for 45 minutes with 1 part water, 1 part sake. but I steamed it for about 10 minutes because people were getting hungry. And it turned out fine.

7. Baste fillets with reduced sauce and smoke at 150 degrees for 15 minutes. Basting once or twice during that time.

Serve over rice with garnishes. Yumm!

Looks incredible!! I’ll definitely keep this one in mind!!
God grant me the vision to dream of catching fish, the focus to visualize myself catching fish, the faith to believe that I will catch fish, and the wisdom to keep the freezer stocked with hamburgers and hot dogs.

Dang... my apartments don't allow open flame grills... Guess someone else that wants to reproduce this can invite us for dinner?! =P
